Millstream Opens in Woodstock, New York

 
 

The Catskills restaurant reopens with a newly renovated dining room and new executive chef.

Woodstock, New York, June 2022 – Millstream, the seasonally-driven restaurant and patio nestled on Sawkill Creek river in a renovated 1700’s mill house, reopens in Woodstock, New York (114 Mill Hill Rd Woodstock, NY 12498). Executive chef Dan Silverman (Minetta Tavern, Starr Restaurants) offers an elegant menu of seasonal American dishes that highlights produce, proteins and ingredients from local farmers and purveyors he’s built relationships with over the last two decades. The naturally lit dining room features exposed wooden beams and a newly renovated open kitchen, with two wooden patios overlooking the river and lush greenery of Woodstock. 

The Team:

Millstream is the newly reopened restaurant from Shale Hill Hospitality Group, which has become known for its popular Upstate restaurants and events companies, including The Dutch, Farm Kitchen, Maxwell’s Plum, Shale Hill Catering, Windmill Wine & Spirits, and others. The group opened Millstream (previously known as Millstream Tavern) in Spring 2021, and closed the property over the winter for renovations. Millstream re-opens this summer with a new executive chef and culinary director, Dan Silverman, who previously helmed acclaimed kitchens like Balthazar Restaurant and Minetta Tavern, and worked alongside award-winning chefs and restaurateurs like Danny Meyer, David Bouley, ​​Keith McNally and Stephen Starr, before moving permanently to the Hudson Valley in 2020.

The Menu: 

Chef Dan’s menu highlights locally sourced produce, proteins and ingredients from farmers like Story Farms, Upstate Farms and Snowdance Farm. The menu begins with snacks like Local Baby Radish with Pistachio-Feta Dip; Whole Steamed Artichoke with Tarragon-Grain Mustard Sauce; and Lioni Burrata with Mortadella and Baby Arugula; and Raw bar items like Yellowfin Tuna Crudo with Scallion, Lime and Marcona Almonds; East Coast Oysters with Cucumber-Chili Mignonette; and Pickled Gulf Shrimp with Shaved Fennel and Cilantro. Salads include Smashed Cucumber Salad with Chilies, Herbs and Toasted Sesame Seeds; Heirloom Carrot Saladwith Purslane, Marinated Feta and Red Wine-Oregano Vinaigrette; Escarole Salad with Grapefruit, Pistachio and Coriander Seed Vinaigrette; White Beans, Celery, Spanish Anchovies with Shaved Parmigiano; and Grilled Spanish Octopus with Roasted Sweet Potato, Grilled Red Onion and Romesco Sauce. Entrées include Risotto “del giorno”Summer Vegetable Terrine with Roasted Vegetables, Cashews and Herb Salad; PEI Mussels with Chorizo, Tomato, Fennel and Orange; Roasted Chatham Cod with Chanterelles and Bacon;Snowdance Farm Chicken with Salsa Verde and Watercress; Millstream Tavern Burger with LTO and House Sauce; and Local Grass Fed NY Strip Steak with Sauce Au Poivre and French Fries.

The beverage menu offers beer from Hudson Valley breweries, a classic cocktail list from beverage manager Christian Hartmann, a wine list with a focus on organic biodynamic wines, and more.  

The Space:

Operating partner Jenny Oz LeRoy renovated the 80-seat dining room, which features expansive windows, exposed wood beams, an oversized fireplace, and wrap-around bar. Millstream’s two outdoor patios offer an additional 25 seats, all of which overlook the calming river and lush greenery. 

Millstream is open Friday - Sunday from 5 -10pm, with dinner service expanding and lunch service launching in the coming weeks. Reservations are available on Resy and walk-ins are always welcome.
